		<description>I loved your profile in the Charlotte Observer.  I too cook all the time and will try anything.  I have that same risotto pan that you have.  Gordon Ramsey inspired me to learn to make the &quot;perfect risotto&quot; and now mine is better than you can get at a restaurant.  In the fall, you need to spring for chestnuts at Williams Sonoma (when they put them on sale) and add them to your risotto.
